Caviar Production in Azerbaijan Surges by Over Fivefold in Early 2025

Baku: Caviar production in Azerbaijan has experienced a significant increase in the first quarter of 2025, with output rising 5.1 times compared to the same period the previous year. In January through March 2025, the country produced 529 kg of sturgeon caviar, as reported by the State Statistical Committee to APA-Economics.

According to Azeri-Press News Agency, this production volume marks an increase of 425.9 kg compared to the first quarter of 2024, when only 103.1 kg was produced. This surge underscores a notable growth in Azerbaijan’s caviar industry within a year.

In addition to the production figures, it is noteworthy that from January to February 2024, Azerbaijan exported 160 kg of sturgeon caviar, generating a revenue of USD 167.2 thousand. The average export price per kilogram of black caviar during this period was 1,777 AZN.

Conversely, during that same two-month period in 2024, Azerbaijan imported 1,140 kg of black caviar from China, costing USD 343.32 thousand. The average import price per kilogram was significantly lower, at 512 AZN. This data highlights the dynamics of Azerbaijan’s trade in black caviar, as well as the significant domestic production growth.
